Serious baseball coaching question #2…?

This is the senario… I will be graduating with my 4 year degree in December. I want to be a baseball coach and I have played in high school and at a two year college. A few months ago I started volunteering at a local community college with their baseball program. I very quickly realized that I had way more knowledge of the game than the "head coach". I carried on my business and started implementing my own work out before he got to the field every day to screw it all up. Basically, the guy has NO business on a baseball field. My question is: since I am technically not getting any good coaching experience from this school, if I were to quit, would this little experience I have gained to put on a resume be good enough to get future jobs in the coaching field? I know this is long winded, but any serious answers would be great!
